quick & healthy weeknight meal {chicken sausage burrito bowl}

On the menu for this week I had Veggie burrito bowl, however, when I went to see what my macros were when I got home for dinner, my protein was really low for the day. I replaced my intended taco spiced black beans with chicken sausage we already had. Don’t mind that my “bowl” is actually too big to fit in the bowls we have so I actually had to make it a plate..

We always keep Al Fresco chicken sausage on hand and this week I  happened to have spicy jalapeno chicken sausage.  The jalapeno gave it the extra kick both Matt and I love!

This came together so fast thanks to all the pre-made sides. You can obviously make them from scratch, but this is such a life saver for me mid week. I would much rather spend that time with our little family instead of cooking.  Enjoy the recipe, let me know what you think!

weekly meal plan {still working on those goals}

Happy June! I can’t even believe summer is around the corner.

SO, those May goals… Well… The office has been on hold.  Neither Matt nor I are handy and the curtains cannot be hung.  We now have two unnecessary holes in the wall from trying. I’ve also been having trouble finding the exact right things I want to fill the room with from Homegoods. So we tried, that counts for something.

I think I’ve done fairly well with my ‘can do attitude’. I had a few down days here and there, but who doesn’t? Healthier choices have been in full swing and still going strong. Lastly, I have been a gym class hero.  I tried at least 4 new classes this month alone and fell in love with three of them! Looking forward to the momentum in June.

Overall, there’s room for improvement in June, like always. Hopefully we can get my Dad to the house to help with the office and we can start to really enjoy the space.

Moving on, this weeks meal plan is a little weird, I am still getting used to being alone and cooking for one every other day. I’ve actually have been enjoying it (so much more time for chores!), but it’s still an adjustment and feels out of the norm.

I whipped up this menu in about 3 minutes with all my current cravings. Doing my weekly shop on Sunday at Trader Joe’s and very excited about it. Praying I find that cauliflower pizza crust!!
