cauliflower pizza crust {& some other trader joe’s finds}

I finally stumbled upon the Trader Joe’s cauliflower pizza crust as you might know by now.  I was really looking forward to trying it and totally opted to have that instead of my usual solo Sunday night take out.

First of all, if you do make this, read the instructions first. I messed up on step one and immediately knew when I went to flip the crust to brown the other side.  Put the crust on a greased cookie sheet.  I went with a pizza stone thinking it would crisp it. Very wrong. It kinda got stuck, but I also semi saved it before it was too far gone {just lost a few chunks}.image1.jpg

I was really anxious to try it, I did cook the length of the directions, but next time would cook it even more. I do tend to like things “burnt” and extra crispy. You COULD pick up the pizza and eat it with your hands, but it was pretty floppy.

Taste wise it was more on the bland side, I plan on maybe a sprinkle of Parmesan after I flip it next time, still low carb right? Though I’m not sure what I was expecting!

Will definitely buy again and try all the above and I think it will be perfect.

I also found a few more things from Trader Joe’s I wanted to try during my trip. I’m a sucker for anything “Everything ” flavored. There are now Bite Size Everything Crackers. Would be so good with hummus or cheese!img_6424.jpg

I have a bad habit of perusing the treats at Trader Joe’s. I stumbled upon dairy free mini vanilla sandwiches! Smaller versions of my beloved ice cream sandwiches. Perfect for a small after dinner treat.IMG_6423

Lastly, I found Veggie Kabobs mixed in with the fresh veggies! They are pre-skewered and ready to grill or bake or whatever you wish. I know it’s really lazy, but anything that saves me time, I’m into.

weekly meal plan {still working on those goals}

Happy June! I can’t even believe summer is around the corner.

SO, those May goals… Well… The office has been on hold.  Neither Matt nor I are handy and the curtains cannot be hung.  We now have two unnecessary holes in the wall from trying. I’ve also been having trouble finding the exact right things I want to fill the room with from Homegoods. So we tried, that counts for something.

I think I’ve done fairly well with my ‘can do attitude’. I had a few down days here and there, but who doesn’t? Healthier choices have been in full swing and still going strong. Lastly, I have been a gym class hero.  I tried at least 4 new classes this month alone and fell in love with three of them! Looking forward to the momentum in June.

Overall, there’s room for improvement in June, like always. Hopefully we can get my Dad to the house to help with the office and we can start to really enjoy the space.

Moving on, this weeks meal plan is a little weird, I am still getting used to being alone and cooking for one every other day. I’ve actually have been enjoying it (so much more time for chores!), but it’s still an adjustment and feels out of the norm.

I whipped up this menu in about 3 minutes with all my current cravings. Doing my weekly shop on Sunday at Trader Joe’s and very excited about it. Praying I find that cauliflower pizza crust!!

weekly meal plan {light & fit week}

Making next weeks meal plan was quick and easy this week because I know after a long weekend away I’m really going to want to buckle down and get back to business.

On these types of week I try and keep it lean, green and load up on veggies in hopes that any extra bloat I have from weekend cocktails will subside.

We are heading up to Lake Winnipesaukee when I get out of work today! By we I mean Penelope and me. Matt will be joining us on Sunday when he’s done with work. My family has a home on the lake and I try to go up as often as possible, even with the weather not being so great, I’m so excited to kick off summer this weekend at some of our favorite lakes region spots. Hoping to document all of our weekend for a Monday post!

My plan is to enjoy the weekend and hop back to it Monday. I’ve been in a bit of a physical rut lately so I’m really thinking that relaxing to the max this weekend will help loosen up my mind and recharge mentally to hit some goals next week.

desk lunch favorites {open face veggie sandwich}

So this might be bad, but I eat my lunch at my desk Monday through Friday.  I use my lunch break to either workout, run errands or enjoy nice weather outside. Regardless, I like to keep my lunches light and healthy no matter the day and I don’t think I’m alone in that! I also do NOT like to spend too much time meal prepping.  At one point in my life I would spend 4 hours on a Sunday meal prepping and it made me hate prepping, hate healthy food and not enjoy the lifestyle.  Don’t get me wrong I LOVE cooking, but when the sun is shining on a rare Summer Sunday in New England and I can be at the beach, I prefer a beach chair and Cape Cod chips.

I thought I would try sharing a favorite lunch this week that I enjoy both at home AND at my desk, though bringing to work involves an extra step or two. The open face veggie sandwich started as a regular sandwich for me, but I ended up putting so many veggies inside that it would fall apart when I ate it. I changed it to open face and it seems to work better for me now.  The great thing about this is you can really tailor it to whatever you like OR whatever you have in your fridge.  I love Ezekiel bread with edamame hummus, but any wrap and or favorite bread would be great! The hummus could easily be replaced with guac, laughing cow cheese, cream cheese, Tzatziki, anything!

weekly meal plan {with tips & tricks}

Each week, usually on Thursdays, I make a meal plan and a grocery list. Doing this helps me make healthier choices and also stops me from buying every single new exciting item I see in the grocery store when I’m hungry {always. hungry.}. Let’s be real though, I still buy some new exciting things, it’s part of the fun of going to the grocery store. I also prefer to shop Friday’s after work for a couple reasons.  One being the store is stocked Friday night before the weekend rush, and the other being it’s so nice to not have to worry about it all weekend.

While planning I try and choose 1-2 crock pot meals, a vegetarian meal (that I can add meat to for Matt) and I always try and keep things interesting so that I actually look forward to eating a healthy dinner. Easier said than done, right? Something else I learned after Matt and I moved in together 4 years ago- if I want to bring any leftovers for lunch, I put it aside before we start eating.  If Matt sees it, he will eat it.

I always begin my meal planning on Pinterest.  I only keep recipes posted on there either for the idea or they are tried and true.  I am extremely picky with the quality of a recipe.  My favorite blog to cook from is Skinnytaste- her recipes NEVER fail me and I own both her cookbooks. Once I see a recipe I like, I go to my google calendar and plug in meals for each day.  If I see I have a busy night one night, a crock pot meal will be ready when I get home.  Whenever you see “breakfast for dinner” it has become the code for eat something from the fridge or pantry. Every once in a while it’s good to use up things we have that have built up. Plus, sometimes you just really want a bowl of cereal for dinner. This all seems so simple, but it’s taken a couple years for me to perfect. I do love the ability to click back through my calendar and see what I was eating one week where I felt really strong at the gym or energized at work to see what works best for me.

There are definitely some things that appear on our menus more times than others, things that are easy and quick tend to linger for longer. Right now we are loving marinated pork loin and broccoli rice, we change up the veggies each week to what looks good in the store that day.

This menu was tweaked more than usual for a few reasons. First, I am new to this whole design thing {thanks for bearing with me, I’m learning and googling everything as I go}. Second is that we are spending Memorial Weekend in New Hampshire. To make matters more confusing, Matt’s work schedule is changing for a month or two. He is going to be working one 12 hour day and then off the next, so this means dinner wise I am eating alone every other night.  I know this would bother most people, but I am looking forward to more vegetarian friendly & light meals. Trying to find the bright side!

grocery store finds {trader joe’s}

Each week, for the most part, I genuinely enjoy going to the grocery store. If I had all the time in the world I would probably love it even more.   I love finding new items to try and don’t mind spending a few extra bucks to buy anything that will make my life a little easier {pre-cut butternut squash, always on repeat}.

I either shop at Trader Joe’s, Market Basket, Target or BJs, depending on the week and our needs. I keep a running note in my phone of a list for each store {and a list for Homegoods} so that if I end up popping in for what I think is one thing, I can grab other things I forgot I needed.

Last week when I went to Trader Joe’s during my lunch break to do a quick grocery shop for the week, I thought it would be fun to share items that are staples in our household and also some items that I just discovered or I am looking forward to working into our meal plan for the week.

Items you will always find in our house:Essentials

  • TJs EVOO- it tastes AMAZING and this huge bottle is only $7.99. It reminds me of the expensive olive oil my Nonnie used to make homemade salad dressings with.
  • Seasoning Blends- the chili lime seasoning in the photo I use to make spicy shrimp tacos or spice up some plain chicken. Another favorite is the “Everything but the Bagel” seasoning.  I use it on sandwiches, kale chips, mix into hummus & I saw a recipe to rim a bloody mary with it.. haven’t tried it just yet, but it’s on my to do list!
  • Lentil Pasta- I have been obsessed with non-pasta pasta’s since they first came out a few years ago. Anything to lessen that guilt of eating a whole bowl of wheat!
  • Turkey Bolognese- this is a frozen sauce that tastes amazingly homemade and is perfectly healthy.  I love heating it up in the micro and throwing over butternut noodles or zucchini noodles.
  • Edamame Hummus- I love all Trader Joe’s Hummus’s, but the edamame one in particular is different from any other I have tried. It’s salty with a slightly soy sauce/ Asian hint to it. I love using as a sandwich spread {with the everything bagel spice}.
  • Margarita Mix- I usually make my own mix, but in a pinch this is my go to. Not too sweet or sour and tastes so light and refreshing.

Some new finds:

  • Gluten free oreos- They are called “Joe Joe’s ” at TJs. I have been avoiding daiNew Findsry lately and these were a good df find!
  • Broccoli Florets- If you love the freeze dried pea pods, you will be obsessed with these.
  • Dried apple rings- they taste like chewy candies and I’ve had to limit myself.. but they are that good and don’t have any added sugar.
  • Butternut squash soup- this soup is dairy free and so creamy and delicious. I throw a cup into a mason jar and bring to work for lunch with a salad.
  • Vanilla cake mix- not healthy, but literally the best tasting mix ever and is dairy free in the box, just use your own dairy free butter sub!
  • Cauliflower pizza crust- have not personally tried, only saw it was just released this week- will keep you posted!

Really looking forward to trying some new things, hope you are feeling as inspired as I am for next week!

I am planning to get another post up this week of our meal plan for next week, thinking some of the above will be incorporated.

may goals

At the beginning of each month I tend to make a list, mental or physical, of goals for the month. The focus of the goals range from health, organization, household, mental, if you can improve it, I can make it a goal.  I don’t always hit all of them, but it feels good to try.

My goals this month are mostly physical health related, but there is a little spring cleaning to finish in the Lynch household.

The first goal is to have a can do attitude. I’ve noticed myself lately telling my self back, “you can’t do that, that’s not realistic”.  This month I want to work on telling myself I can do anything I set my mind to.

Another goal is very simple- finish putting together our new office that we started putting together last month.  When we moved into this house 4 years ago, the room started as a “den”, whatever that is.  It was all Matt’s bachelor pad’s extra furniture.  Enter Penelope last year and we turned the room into her very own puppy play place.  Now that she’s {mostly} trained she’s a “free range” dog. Is that a thing?

Goal 3 is to make all around healthier choices, especially on the weekends. Me and a bestie have signed up to do this together and are constantly snapping all our healthy choices, sharing recipes and ideas and …

This brings me to goal 4, try new exercise routines.  For me this means trying new classes at my work gym during lunch.  I’m really excited to mix things up!

It’s only May 3rd, but I am feeling very motivated and excited to see what this spring month will bring.
